Country Kitchen: Grilled Peach Salad
Here is a recipe from the QCWA Country Kitchens program that really suits this season.

A salad using peaches, or it works well with nectarines too.

Country Kitchens aims to promote healthy recipes using seasonal fruit and vegetables. It encourages everyone to reduce sugar intake, get at least five servings of vegetables and two servings of fruit a day and drink plenty of water, especially with our present weather.

Our meetings this year will take place at the RSL Memorial Hall, Burnett Place, Sandgate. They are held on the third Wednesday of the month, gathering from 9am for a 9.30am start.

On the first Wednesday of the month we have an informal craft/coffee morning at the same venue from 9am-11am.

Please note our February meeting is an outing to the Nest Craft Community at Brendale.

INGREDIENTS

Dressing:

1/3 cup extra virgin olive oil
2 tablespoons white wine vinegar
½ teaspoon crushed black pepper

Salad:

2 teaspoons honey
3 ripe peaches, halved, de-seeded
4 cups rocket
¼ of red onion, finely sliced
1/3 cup pecans,
roughly chopped or crumbled
60g goat cheese or feta

METHOD

PLACE the oil, vinegar, and pepper in a jar and shake until combined. Combine 2 tablespoons of the dressing mixture with the honey and brush over the cut surfaces of the peaches.

HEAT a non-stick grill pan (or BBQ) to high. Place peaches cut side down, on the hot grill.

GRILL peaches for 2 minutes or until golden brown then remove and allow to cool. Slice thickly.

PLACE rocket, sliced grilled peaches, red onion, pecans, and fresh goat cheese in a large salad bowl. Drizzle with the remaining salad dressing. Gently toss and serve immediately.

The Sandgate branch of the QCWA meets on the third Wednesday of each month at the Sandgate Bowls Club; and they have a casual craft day on the first Wednesday of each month at the RSL sub-branch hall in Burnett Lane. Anyone interested in joining can email sandgateqcwa@gmail.com
